Let's head to Hawaii....for some coffee cake......



I have been sent this Hawaiian Coffee Cake recipe and it was mentioned that this recipe is one of the top ten recipes in this category........but I need you all to try it since I started my diet on Monday!!!
Cooking Time: 45 min
Ingredients

    3/4 cup butter
    3/4 cup brown sugar
    3/4 cup granulated sugar
    3 eggs
    1 teaspoon salt
    1 teaspoon vanilla
    1/2 teaspoon baking soda
    1 ounce Hawaiian coffee liqueur (or any coffee liqueur)
    2 ounces softened chocolate (semi-sweet)
    3/4 cup milk
    3 1/2 cups flour
    3 teaspoons baking powder
    1/2 cup shredded coconut

Instructions

    Preheat oven 350 degrees F.
     Cream together butter and sugars.
     Beat in eggs.
     Add salt, vanilla, soda, liquer, and chocolate.
     Add in milk and then flour, beating alternately. Beat for 3 minutes.
     Add baking powder. Beat 30 seconds.
     Add coconut.
    
Bake at 350 degrees F for 45 minutes.  You can also bake 30 minutes for regular layer cake. Makes a 9x13 cake.

Icing

    3 tablespoons butter (softened)
    2 cups powdered sugar (add more if too soft)
    1 ounce rum or coffee liqueur
    1-1/2 ounces heavy cream
    
Blend and beat for 3 minutes. Spread icing onto cake.

ATC Wednesday and my latest recipe ....I submitted it to a contest!!!

Hi Everyone!!

hope you're enjoying the wonderful weather.....I have been doing a lot of gardening lately....being outside is so much fun and planting has always been my thing.....

For ATC Wednesday I revamped my special angel....this is Cole's Guardian Angel....I am happy she looks out for him when I can't.....

I also created a very tasty recipe...you can get a sneak peek below...but I will have to share the recipe once the contest is over....I submitted it to the Canadian Living Cook of the Year Contest.....

All I can say right now is that it tastes great and Cole loves it too....
