Hi Everyone....I saw this week's prompt on Three Muses Challenge blog this week and immediately thought of this piece I did for a Corporate Cookbook Cover....and I know that when I think of fun...I always enjoy spending countless hours in the kitchen cooking up wonderful food...and this gang of food sure looks like they are having fun....so for the Fun and Games Challenge I am submitting these fun guys...or shall I say Fungi...hehehehe....anyways I hope you enjoy it....I made some changes to my initial illustration and added some textures to the background for fun....and now for a recipe from my kitchen.....
Diana's French Onion Soup
1 -2 tablespoons butter
3 tablespoons oil
2 large onions, peeled and sliced thinly
1/2 tsp sugar
1/2 tsp Sea Salt
6 cups homemade chicken broth
3-4 sprigs thyme
2 cloves garlic finely chopped
homemade croutons
2 cups Cheddar, Swiss, Gruyere or emmenthal cheese ( I use what I have on hand since I make this soup at least 2 times a week.....)
salt and pepper to taste
On medium heat in a large pot add butter and oil and sliced onions. Sautee till the onions caramelize. Add sugar to help get them all nice and golden brown. Add garlic and sautee for a few minutes with the 3-4 sprigs of thyme. Add salt...if you want more or less you can add it as you taste the soup. Add chicken broth and let simmer for about 30 minutes.
Homemade croutons
French Bread sliced in chunks
olive oil
salt and pepper
Bake at 350 till golden brown and dry and crisp
Serve the soup in oven safe dishes and top with the croutons and cheese...place under the broiler till your cheese is ooey gooey good...and enjoy!
If you don't have time for homemade chicken broth...you can use a good bouillon cube....with water...but nothing beats homemade chicken broth....
